Our Story

Where the idea was born

NUA was born from a simple conviction: that plant-based food, at its best, should feel like abundance. A genuine invitation to eat more beautifully. Madeira is rich of extraordinary produce — volcanic soil, Atlantic light, and a growing culture of farmers who care deeply about what they cultivate. NUA was conceived as a space to honour that, and to offer something Funchal was missing: a generous brunch experience that honours local produce while being entirely plant-based.

Conscious Sourcing

At NUA, we believe that what is good for the land and good for the body can also be deeply pleasurable. Our menu changes with the seasons, guided by what is available locally and what is at its peak. We work with producers in Madeira who share our values: honesty about ingredients, and a preference for flavour over convenience.

We make a virtue of creativity. Our kitchen team approaches vegetables, legumes, grains, and dairy with the same curiosity a fine dining kitchen might apply to any ingredient — because we believe this is how plant-based food earns its place at the table. 

The Origin Story

Madeiran Spotlight

For her, Madeira was always home. For him, it was the place he returned to every summer since childhood.

Years later, their paths crossed, and after five years together, they decided to create something that brought their shared values into one space: sustainability, local community, and good food made with care.

For three years they worked on renovating what would become the restaurant’s space and finally brought NUA to life.

From the beginning, their vision was to honour Madeiran terroir, celebrate local farmers, and bring the island’s produce to the centre of the kitchen in a fresh, contemporary way.

Purposely built with no fixed menu, the offering evolves day by day around the seasons, reflecting what Madeira gives in each moment. It is a way of cooking that values care, intention, and minimum waste. This is why NUA’s cuisine is naturally vegetable-led and guided by the land and deeply connected to its agricultural heritage.

But NUA was never meant to be only about food. It was imagined as a space to inspire and connect — through local art, thoughtful details, warm hospitality, and a deep commitment to building community around shared values.

At its heart, NUA is an invitation: to slow down, to gather, and to nurture.

The buffet format is intentional. It asks you to slow down, to graze, to try things you might not have chosen from a menu. It creates moments of discovery. It turns a meal into a ritual.
